Sausage and Potato Croquettes
1 pt. hot mashed potato
1 tbsp butter
few grains cayenne
1/4 tsp celery salt
1/2 tsp onion juice
8 small sausages
Fine dry breadcrumbs
1 - Mix together the potato, egg yolk, butter, and seasonings.
2 - In the meantime, heat the sausages to the boiling point and boil for a moment or 2.
3 - Then shape the potato mixture into croquettes, encasing eahc sausage in a thin potato layer.
4 - Dip in the crumbs, then into the egg white, slightly beaten and mixed with 1/4 cp cold water.
5 - Roll in crumbs again and fry in deep fat, hot enough to brown a cube of bread in 55 seconds.
6 - Drain on crumplede paper.
