Ham and Potatoes, English Style
1 slice ham cut 1/2 " thick
1/8 tsp dry mustard
1 tbsp flour
8 medium sized potatoes
1 medium sized onion, sliced
4 tbsp flour (additional)
1/2 tsp salt
1/4 tsp pepper
4 tbsp savory drippings
3 cps milk
1 - Order the ham cut 1/2" thick.
2 - Rub with the tbsp of flour and the mustard combined.
3 - Place in a shallow oiled pan.
4 - Peel and slice the potatoes; combine with the onion; and dust with the flour, salt, and pepper.
5 - Place 1/2 the potatoes on top of the haqm and dot with 1/2 of the savory drippings.
6 - Cover with the remaining potatoes; and dot with the remaining drippings.
7 - Pour over the milk; and bake in a slow oven, 350 degrees F. for an hour or until
the potatoes and ham are tender.
