Roast Shoulder of Fresh Ham
1 shoulder fresh ham, about 4 lbs.
plain bread dressing
1 - Order the shoulder boned and rolled. dust with plenty of salt and a little pepper.
2 - Place in a baking pan; put in a hot oven, 45o degrees F. and roast until it begins
to turn color, about 15 minutes.
3 - Redue=ce the heat and half cover the ham with bread dressing. place the remaining
dressing in oiled custard cups.
4 - Return the meat to the oven; bake until done, allowing 20 minutes to the lb.
5 - Baste occasionally with water, containng a little butter and grated onion.
6 - Put the cups of dressing in to bake for the last 20 minutes.
7 - Serve the meat on a platter and surround with little mounds of dressing.
8 - Make a gravy from the drippings in the pan.
