Country Sausage Cakes
1 lb country sausage
1 cp rice
1 - Cover the rice with 3 cps cold water; add 1/2 tsp salt; and gradually heat, without stirring
until the rice has absorbed most of the water.
2 - Place in a double boiler; cover and finish cooking, allowing about 35 minutes.
3 - This insures rice with unbroken distinct kernels.
4 - Shape the sausage meat into small flat patties and pan fry in their own fat, first
on one side then onn the other until browned, allowing about 10 minutes, or bake in the oven if it is in use.
5 - To serve, heap the rice in a mound in the center of a platter, pouring a over little melted butter;
and arrange the sausage cakes around the edge with intersperced slices of fried tomato.
