Veal Patties with Green Pepper Gravy
1 lb veal lean shoulder of veal(chopped)
11/2 tsp salt
A few grains of pepper
4 tbsp fat
1 small onion, sliced
1/2 green pepper, chopped
1 tbsp flour
1 - Combine the veal, salt, and pepper; blend and form into four thin flat cakes.
2 - Melt the fat; add the onion and green pepper; and fry until the onion is yellowed.
3 - Remove from the fat and reserve.
4 - ut in the veal patties aqnd cook over a moderate heat until brown on one side.
5 - Turn over and brown on the other side.
6 - Transfer to a heated platter and keep hot while preparing the gravy.
7 - To do this, return the onion and green pepper to the frying pan.
8 - Add the flour and blend' Gradually add one cup of water and stir until the gravy thickens.
9 - Season to taswte with salt and pepper and pour over the patties.
