Stuffed Breast of Veal
3 lbs breaSt of veal
1 - Have the bones in the breast of veal cracked; and rub both sides of the meat with salt and pepper.
2 - Spread the bone side of the meat with the stuffing; roll or fold over the meat; and fasten with skewers.
3 - rush with a little fat and transfer to a small roasting pan. Roast in a very hot oven for 15 minutes.
4 - Reduce the heat slightly and continue roasting for 1 hour.
5 - Baste the veal every 15 minutes with 2 tbsp additional fat melted in a half cup of hot water.
6 - Serve with gravy made from the drippings in the pan.
