1 1/2 lbs breast of lamb
2 tbsp flour
squares of toast
4 fried bananas
1 - The meat should be free from bone.
2 - Cut into 3" squares and pound with a potato masher to flattedn.
3 - Dust with salt and pepper.
4 - Roll up and fasten with toothpicks and dust with flour.
5 - Brown in the drippings.
6 - Add the onion and carrot, chopped fine with water to cover.
7 - Cook slowly until meat is tender, about 1 hr.
8 - Thicken the gravy with the flour stirred to smooth paste with 2 tbsp cold water.
9 - Remove toothpicks, transfer to toast squares and garnish with fried bananas.
