Liver and Spaghetti Casserole
1 lb sliced liver
2 tbsp flour
2 tbsp butter or vegetable fat
1/2 lb boilede spaghetti
1 (No. 2) can tomatoes
1 small onion, minced
1 tsp salt
few grains pepper
1 tsp sugar
1 - Scald the liver in hot wter; drain; remove any skin or veins; cut in small pieces
2 - Dust with the flour; melt the fat; put in the liver and fry until brown.
3 - Arrange alternate layers of liver and spaghetti in and oiled baking dish or casserole.
4 - Combine the remaining ingredients and pour over.
5 - Cover and bake in a moderate oven, 350 degrees F. for 1 hr.
6 - Uncover during the last half hr to brown the top.
