Fricassee of Rabbit
1 large rabbit
1 1/2 tsp salt
1/4 tsp pepper
2 tbsp butter
2 onions, sliced
1 cp diced celery
1 1/2 qts water
split baking powder biscuits
1 - Dress, clean and disjoint the rabbit.
2 - Dust with salt and pepper; Roll in flour, and brown in the butter.
3 - Add the onion, celery, and boiling water to cover.
4 - Simmer until the rabbit is tender, about 1 1/2 hrs.
5 - Thicken with 1 tbsp each of butter and flour, blended for each cp of liquid.
6 - Serve on split baking powder biscuits.
7 - Pass any tart jelly.
