Broiled Liver Soubise
1 lb sliced liver
3 medium-sized onions, sliced thin
6 medium-sized strips bacon
1 - Scale the liver. rain; and rmove the tough skin and veins.
2 - Rub with a little bacon fat.
3 - Dust with salt and pepper and crumbs; and place on the broiler.
4 - Spread one layer of onion on the liver; and top with a slice of bacon.
5 - Broil 3 inches from the flame, allowing about 15 minutes.
