Braised Calves Hearts with Carrots
3 calves' hearts
1 1/2 tsp salt
1/8 tsp pepper
2 tbsp drippings
3 medium-sized onions, chopped
2 cps shredded carrots
1 - Thoroughly clean the hearts. Dust them with salt and pepper
2 - Roll in flour and brown in the drippings.
3 - Then add the onions and when slightly browned, the carrots. Half cover with boiling water.
4 - Cover closely and braise on top of the range or in the oven until the hearts aqre tender, 1 1/2-2 hrs.
5 - Slice - serve with a gravy made from the liquid and vegetables in the pan.
