Broiled Fillet of Flounder aux Herbs
1 lb fillet flounder
2 tbsp melted butter
1 tsp mind=ced parsley
1 tsp minced onion
juice 1/2 lemon
1 - Wash and dry the fish; place in an oiled broiler pan.
2 - Brush with melted butter; dust with salt, pepper, and paprika; and broil
under moderate flame 6-8 minutes.
3 - When fish is almost done, sprinkle with minced onion, parsley and lemon juice.
4 - Continue broiling about 5 minutes; transfer to a heated platter.
5 - Garnish with a few sprigs of watercress.
