Baked Stuffed Smelts
8 large smelts
1/2 cp prepared or home-made stuffing
2 tbsp lemon juice
2 tbsp buttered bread crumbs
1 - Remove the heads, tail, and fins, and clean the smelts.
2 - Fill with stuffing; sprinkle with salt and pepper and arrange on a shallow oiled baking pan.
3 - Pour over the lemon juice; cover, and bake in a hot oven for 10 minutes.
4 - Uncover, sprinkle with crumbs and continue baking for about 5 minutes, or until crumbs are brown.
