Baked Codfish Loaf
1 cp milk
1 cp soft bread crumbs
2 cps flaked cooked or canned codfish
Grated rind of 1/2 lemon
1 tsp salt
1/4 tsp pepper
2 tbsp butter
1 - Scald the milk; pour it into the bread; and set aside until the crumbs absorb most of the milk.
2 - Combine with the flaked fish, lemon rind, salt, pepper, and butter; and fold in the eggs, well beaten
3 - Transfer to an oiled bread pan; place in aq pan of waqter; and bake in a moderate oven, 350 degrees F.,
for 45 minutes, or until the loaf is firm.
4 - Cool slightly; unmould; and serve hot with shrimp sauce.
