1 cold cooked mackerel
1/3 cp salad oil
1 tsp minced parsley
1 tsp grated onion
1 tbsp chow-chow
1 tsp prepared mustard
1/2 cp mild vinegar
1 - Combine the salad oil with the vinegar and all the seasonings.
2 - Beat well; pour over the mackerel and chill for at least 1 hour.
3 - When serving, garnish the fish with nests of lettuce,or with thin slices
of cucumber or tomato seasoned with French dressing.
