Planked Salmon Steak
1 1/2 lbs fresh salmon, halibut or swordfish sliced 1/2" thick
1 tbsp lemon juice
4 tbsp butter
8 new potatoes
2 cps chopped cooked beets
1 - Butter a food-sized pan; and place the fish in it. Dust with salt and pepper;
2 - Sprinkle with lemon juice and dot with butter. Scrape the potatoes and cut in halves.
3 - Place in a second buttered pan; dust with salt; and dot with butter.
4 - Place in a hot oven, 400 degrees F. and bake about 40 minutes, adding a little water to the salmon.
5 - The potatoes should be turned once to brown evenly.
6 - Serve on a plank, the salmon in the center and the potatoes around the edge, interspersed with
chopped new beets seasoned with horseradish. 7 - Garnish with parsley and radishes.
