Oyster Pasty, London Style
1 qt oysters
4 tbsp butter
3 tbsp flour
1 1/2 tsp salt
1/8 tsp pepper
1/8 tsp mace
1 pt. rich milk or cream
1 cp cooked peas
1 cp sliced cooked carrots
1 cp cooked diced celery
short biscuit crust
1 - Wash the oysters, carefully. Make a sauce by melting the butter, adding the flour
and seasonings, and gradually the milk.
2 - Steam the oysters over a half cupful of water until plump; add this liquor to the sauce.
3 - Add the oysters, peas, carrots, and celery.
4 - Line a dish with the biscuit crust cut 1/4" thick.
5 - Pour in the oyster mixture; put on a top of the biscuit crust.
6 - Cut a hole in top and bake about 25 minutes in a moderate oven, 375 degrees F.
