Scalloped Oysters with Sausage
4 link sausages
1 dozen large oysters
1/3 tsp salt
1/8 tsp pepper
fine dry bread crumbs
2 tbsp butter
1 cp milk
2 tbsp flour
1 - Skin and split the sausages, cut in cubes and pan fry until brown, then pour off the grease.
2 - Add the oysters, thoroughlyw ashed and drained, to the sausage.
3 - Cover the bottom of a baking dish with a layer of the two moxed; sprinkle with the salt and pepper.
4 - Place on this a thin layer of breadcrumbs; dot with butter, and repeat, finishing with the crumbs.
5 - Dot again with butter. Pour in the milk mixed with the 2 tbsp flour.
6 - Cook in a hot oven, 375 degrees F. for 20 minutes.
