2 cps minced crabmeat
1 1/2 cps soft bread crumbs
1 1/2 tsp lemon juice
1/4 cp melted butter
1 tsp finely minced parsley
1/2 tsp salt
1/8 tsp pepper
pimento cream sauce
1 - Beat the egg yolks and add to the crabmeat, crumbs, lemon juice, butter, and seasonings.
2 - Fold in the egg whites, whipped stiff, and transfer to buttered custard cups or timbale moulds
3 - Place in a pan of boiling water and bake 30 minutes in the oven at 375 degrees F.
4 - When firm in the center, unmould and serve with pimento cream sauce made by adding
chopped pimentos to a cup and a half of plain white sauce.
