Bakedc Salmon Cutlets
1 can salmon (1 lb)
1/2 cp thick white sauce
1 tsp lemon juice
1/2 tsp salt
a few grains cayenne
1 cp fine dry bread or cracker crumbs
3 tbsp melted butter
1 - Drain and remove skin and bones from the salmon.
2 - Flake the fish and combine with the white sauce, lemon juice, salt, and cayenne
3 - Chill; and shape into cutlets or croquettes, allowing 1 large tbsp for each cutlet.
4 - Combine the bread or cracker crumbs with the melted butter and roll the cutlets in the crumbs.
5 - Transfer to an oiled shallow pan; and bake in a hot oven, 400 degrees F. for 15 minutes,
or until the cutlets are brown all over.
6 - Serve with green pepper sauce.
