New England Codfish Cakes
3 cps diced raw potatoes
1 1/2 cps shredded salt codfish
2 tbsp butter
1/4 tsp pepper
1 egg, beaten
1 - Combine the potatoes with the codfish; and cook in boiling water until the potatoes are tender.
2 - Drain and mash both the potatoes and the fish; and add the butter, pepper and egg.
3 - Beat until the mixture is thoroughly blended;
4 - Drop by tablespoonful into deep fat hot enough to brown a cube of bread in 40 seconds.
5 - Cook until golden brown, and drain on crumpled paper napkins or towels.
6 - Serve with chopped egg sauce.
