1 slice onion
1 sprig parsley
2 cps cooked minced meat, any kind
1 1/2 cps chopped cooked potato
2 tbsp savory drippings
3 tbsp cornstarch
1/4 cp milk
1/4 rsp salt
<1/8 tsp pepper
fine bread crumbs
1 - The onion and parsley should be put through the chopper with meat and potato
2 - Melt the drippings; addhe cornstarch, milk, salt, and pepper to taste.
3 - Edd the egg yolk to the meat mixture; and stir then sauce in.
4 - Shape by small tablespoonfuls into balls.
5 - Roll in crumbs, then in egg whiteseaten with 1/4 cp cold water, then crumbs again.
6 - Fry until golden in deep fat heated to 375 degrees F. or until it will brown a bit
of bread in 55 seconds.
7 -Drain on crumpled paper napkin or towels; and serve with parsley sauce.
