Veal and Nut Croquettes
1 1/2 cps minced cooked veal
1/2 cp finely chopped roasted peanuts
1/2 tsp salt
1/8 tsp pepper
1/2 tsp onion juice
few grains cayenne
1/2 cp thick white sauce
fine dry crumbs
1 - Combine the veal, peanuts, seasonings, white sauce and the egg yolk.
2 - Allow the m9ixture to cool; and form into balls.
3 - Roll in the crumbs, then in the egg white beaten slightly with 1/4 cp cold water,
then in crumbs again.
4 - Fry in deep fat hot enough to brown a cube of bread in 40 seconds.
5 - Drain on paper napkins or towels; and serve with well seasoned brown or tomato sauce.
