Asparagus in Inch Lengths
2 lbs asparagus
1/2 tsp salt
1/2 tsp sugar
2 tbsp butter
1 - Wash the asparagus thoroughly in tepid water. If very sandy, the sand should
first be removed from the tips with a stiff brush.
2 - Scrape off the scales. It is not necessary to peel asparagus.
3 - Cut in inch lengths; place in kettle together with salt, sugar and boiling water
to half cover and boil until the asparagus is tender, about 20 minutes.
4 - The liquid should be largely evaporated.
5 - Add the butter and a trace of pepper if desired.
6 - Let stand 2 or 3 minutes to season; and serve.
