Asparagus Souffle' Pie
1 patty pastry shell
3 tbsp butter
3 tbsp flour
few grains paprika
1/2 tsp salt
1 cp milk
1 cp chopped, cooked asparagus, well drained.
1/2 cp soft bread crumbs<1 tsp baking powder
1 - Line a deep dish pie plate with the patty pastry, slightly building up the edges.
2 - Place it in a hot oven to bake for 8 minutes.
3 - In the meantime melt the butter; stir in the flour and seasonings; and gradually add the milk.
4 - Then add the asparagus, crumbs and baking powder. Stir this into the egg yolks, well beaten.
5 - Fold in the egg whites, whipped stiff.
6 - Transfer to the baking shell and bake in an oven at 375 degrees F. for 20 minutes.
