Stewed Dried Lima beans with Tomato Sauce
2 cps dried lima beans
1/8 tsp baking soda
1 1/2 tsp salt
2 tbsp butter or bacon fat
2 tbsp flour
3/4 tsp salt (additional)
1/8 tsp pepper
1 tsp onion juice
2 cps sieved canned tomatoes
1 - Soak the beans overnight. Then drain; add the soda; cover with fresh boiling water; and
cook slowly for 1 hr.
2 - Dranin again; add boiling water to cover and the 1 1/2 tsp of salt.
3 - Cook an hour longer or until the beans are tender.
4 - Make the tomato sauce as follows:
5 - Melt the fat; add the flour and remaining seasonings. When smooth, stir in the tomatoes;
and cook and stir until the sauce thickens and reaches boiling point. 6 - Pour over the cooked, drained beans; reheat and serve.
