1 lb brocolli
1/2 tsp salt
1/2 tsp sugar
2 tbsp butter
1 - Remove any wilted leaves; and wash the broccoli in tepid salted water.
2 - Cut in even lengths of about 5 inches; tie in bunches..
3 - Place, flower heads up in a kettle containing the salt and sugar.
4 - Half cover with boiling water; put on a lid and boil 30 minutes.
5 - Drain; season with the butter and a little pepper.
6 - Arrange lengthwise in an orderly manner for service.
7 - If desired, a tbsp of Hollandaise sauce may be poured over each serving.
