8 small carrots
1 green pepper, minced
1 onion, minced
3 tbsp butter
3/4 tsp salt
1/8 tsp pepper
1/2 tsp sugar
1 - Wash the carrots; co not peel.
2 - Place in a kettle with a tsp each of sugar and salt;
3 - Cover with boiling water and boil until tender, about 35 minutes.
4 - Put through a potato ricer. In the meantime fry the green pepper
and onion until soft in the butter.
5 - Add to the riced carrots; and beat in the remaining seasonings.
