1 1/2 cps celery, chopped fine
1 1/2 cps soft bread crumbs
3/4 cp grated dairy or full milk cheese
3/4 tsp salt
1/4 tsp pepper
1 tsp onion juice
2 tbsp butter
fine dry crumbs
1 - Combine the celery, crumbs and cheese.
2 - Add the eggs, slightly beaten; and season with the salt, pepper, onion juice and melted butter.
3 - Form into small balls; roll in a little flour; and dipm in the eggs, slightly beaten.
4 - Roll in fine dry crumbs; and fry in deep fat hot enough to brown an inch cube of bread in
55 seconds, 375 degrees F. by a fat-frying thermometer.
