3 cps diced celery stalks
1/2 tsp salt
1/2 tsp sugar
1 1/2 cps white sauce
1 - Thoroughly wash the celery; and place in a medium-sized kettle with the salt,
sugar, and boiling water to half cover.
2 - Put on a lid; and boil until celery is tender, about 45 minutes.
3 - The liquid should be largely evaporated. Use what remains in preparing the white sauce.
4 - Combine the celery with the sauce and serve with a dusting of paprika.
