Dandelion Greens with New Potatoes
2 qts tender dandelion greens
1 tsp salt
3 thin slices bacon
1/8 tsp pepper
1 - Remove the wilted leaves from the greens; cut off the roots;
and wash the greens in tepid water until clean.
2 - Place in a saucepan with boiling water to cover containing salt, the bacon, diced
and the potatoes. 3 - Boil until the potatoes are tender; then drain.
4 - Use the liquid toward a soup.
