Fried Eggplant with Nuts
1 medium-sized eggplant
1 cp fine dry crumbs
1/2 cp finely chopped peanuts
1 - Peel the eggplant; and cut in 1/4" slices.
2 - Dust with salt, pepper and flour; and dip in the egg, slightly beaten
and combined with the milk.
3 - Mix the crumbs and the peanuts; and roll the slices in the mixture.
4 - Heat enough vegetable fat in a heavy frying pan to cofortably cover the bottom,
and put in the eggplant.
5 - Fry until brown on one side; then turn and brosn on the other.
6 - Drain on unglazed paper; and serve.
