Lentils a la Francais
1 lb green lentils
2 qts boiling watrer
1 slice onion
1/2 cp celery leaves
1 tsp salt
1 tsp sugar
3/4 cp cooked minced ham
1/4 tsp pepper
2 tbsp flour
2 tbsp butter
1 - Wash the lentils; and put in a good sized kettle.
2 - Pour in the boiling water; add the onions, celery, salt,and sugar;
and simmer until tender, about 2 hours.
3 - The liquid should be greatly reduced. If more than a pint is left over, pour it out.
4 - Then add the ham, pepper, and the flour and butter creamed smoothly together.
5 - Bring to the boiling point; and serve on toast. Accompany with spring onion salad.
