Mushrooms on Toast
1 lb mushrooms
1/4 cp butter
1/4 cp flour
2 cps milk
1 tsp salt
1/4 tsp pepper
1/4 tsp paprika
1 - Wash the mushrooms; and shred the caps and stems. Do not peel them.
2 - Melt the butter in a heavy frying pan; put in the mushrooms; and cook
very slowly until they are brosn and tender, allowing about 12 minutes.
3 - Remove the mushrooms, and keep hot.
4 - Add the flour to the drippings in the frying pan; and mix to a smooth paste.
5 - Gradually add the milk and the seasonings; and cook and stir until the mixture thickens.
6 - Heat to boiling point. Arrange the mushrooms on toast, and pour the sauce over.
