Creamy Onion Pie
3 slices bacon, diced
5 yellow onions, chopped
1 tsp salt
1 tsp sugar
1/8 tsp white pepper
1 tbsp butter
1 tbsp flour
2 tbsp milk
1 egg, well beaten
7/8 cp milk(additional)
Pastry for pie crust
1 - Fry the bacon until yellowed; add the onions, salt, sugar, pepper, and butter.
2 - Steam for 8 minutes. Do not let the onion brown.
3 - Blend the flour with 2 tbsp milk and stir in the remaining milk.
4 - Add the egg; and stir this custard into the onion mixture.
5 - Line a pie plate with the crust made in the ususal way.
6 - Pour in the custard and bake in a moderately hot oven, 350 to 375 degrees F.
7 - Bake until the crust is brown and the onion filling is firm in the center and a very light brown.
Use as a savory dish.
