Young Onions on Toast
20 young onions
1 tsp salt
1 tsp sugar
2 tbsp butter
4 large slices buttered toast
1 - Wash and cut off the roots and tought tops of the onions, leaving about 3" of green.
2 - Place in a kettle; almost cover with boiling water to which the tsp of salt and sugar have been added
3 - Boil until the onions are tender, about 20 minutes.
4 - Drain; add the butter, salt and pepper to taste.; let stand over low heat for 3 minutes.
5 - Serve arranged in rows on the toast with the remaining sauce poured over.
