8 medium-sized parsnips
1 tsp salt
1/8 tsp pepper
2 tbsp butter
1 - Select parsnips that are plump and fresh.
2 - Peel and cut in eighths, lengthwise and crosswise.
3 - Place in a well buttered casserole, sprinkle with salt and pepper.
4 - Dot with butter; and barely cover with boiling water.
5 - Put on a lid and bake in a hot oven, 400 degrees F. until
the parsnips are tender, about 40 minutes.
