Creamed Baked Potatoes with Cheese
4 Idaho Potatoes
1/3 cp hot milk
2 tbsp butter
1 tsp salt
1/8 tsp pepper
4 slices soft American cheese
4 tbsp coarse buttered crumbs
1 - Scrub the potatoes; dry, and rub lightly with fat.
2 - Bake in hot oven, 400 degrees F. until tender, about 50 minutes.
3 - Then cut a cover from the top of each; scoop out the pulp with a spoon.
4 - Mash it; add the milk, season it with the butter, salt, and pepper.
5 - Beat until the mixture is creamy; and refill the potato shells.
6 - Place a slice of cheese on each potato; cover with the buttered crumbs
and reheat in a hot oven until the cheese is melted and the crumbs are brown, about 12 minutes.
