3 cps chopped peeled potatoes
1/4 cp butter
1/2 cp milk
1/2 tsp salt
1/8 tsp pepper
1 - Melt the butter in a frying pan; put in the potatoes; moisten with milk.
2 - Sprinkle with salt and pepper; Cover and cook very slowly, turning
occasionally with a knife or spatula until the potaqtoes begin to look translucent.
3 - Add a little more milk if necessary.
4 - When the potatoe is tender, about 20 minutes, let it brown on the underside
5 - Then fold over like an omelet.
