Delmonico Potatoes au Gratin
3 cps chopped raw potatoes
2 cps milk
1/2 tsp salt
1/8 tsp pepper
2 tbsp flour
2 tbsp butter
1/2 cp chopped dairy cheese
1 - Heat the milk in a double boiler; and add the potato.
2 - Cook over hot water until tender, about 30 minutes.
3 - Then add the seasonings, and then flour and butter creamed together.
4 - When thick, transfer to a buttered shallow baking dish.
5 - Sprinkle with the cheese and brown in a hot oven.
