6 medium-sized potatoes
1/2 tsp salt
12/ tsp sugar
1/2 cp hot milk
1 egg yolk
1 - Peel the potatoes; and cover with the boiling water.
2 - Add sugar and salt; cover and boil until tender, about 45 minutes.
3 - Drain and put through a potato ricer. Add salt and pepper to taste.
4 - Beat in the hot milk and egg yolk and beaty until fluffy.
5 - Arrange in mounds on an oiled baking pan, and place in an oven for 15
minutes to puff up and brown.
