Escalloped Potatoes with Bacon
8 medium-sized potatoes
1 tbsp grated onion
4 tbsp flour
1 tsp salt
1/4 tsp pepper
4 tbsp savory drippings
3 cps milk
8 thin slices bacon
1 - Peel the potatoes; cut in thin slices.
2 - Rub a baking dish with drippings and arrange a layer of potatoes in the bottom.
3 - Combine the onion, flour, salt, and pepper and sprinkle 1/4 of this over the potatoes.
4 - Dot with 1 tbsp of the drippings; cover with a secon layer of potatoes; and repeat
until all ingredients have been used, finishing with a layer of the flour.
5 - Scald the milk, and pour it over; cover and bake in a moderate oven, 375 degrees F. for 1 hr.
6 - 15 minutes before the potatoes will be done, remove the cover; and lay the strips of bacon on top to cook.
7 - When done, the bacon should be crisp. The bacon fat will lend a delicious flavor to the potatoes.
