French Fried Potatoes with Onions
8 medium-sized potatoes
1 - Scrub and peel potatoes and cut in lengthwise strips, about 10 to a potato.
2 - Peel the onions; slice crossways then in halves. Separate to form strips.
3 - Half fill a frying kettle with fat; and heat until a bit of bread will brown in 55 seconds.
4 - Put in a layer of potato with a little onion in a frying basket.
5 - Plunge this into the fat; fry until goleden brown; drain on drumpled paper napkins or towels.
6 - Dust with salt and transfer to the top of a double boiler; and cover closely to keep hot.
7 - Serve as soon as possible.
