Frenched Sweet Potatoes
6 medium-sized sweet potatoes
1 - Peel the potatoes; and cut in lengthwise strips.
2 - Parboil these for 10 minutes; then drain and turn onto a towel to absorb the moisture.
3 - Heat deep fat until a bit of bread will brown in 55 seconds.
4 - Put a layer of potatoes in a frying basket; plunge into deep fat; and fry until golden brown.
5 - Drain on crumpled paper napkins or towels; and dust with salt.
