8 small well formed potatoes
1/2 tsp salt
1/2 tsp sugar
2 tbsp butter
few grains pepper
2 tbsp minced parsley
1 - Peel, or scrape the potatoes; and cut in halves.
2 - Cover with boiling water; add the salt and sugar; put on a lid
and boil until the potatoes are tender.
3 - Drain, and shake a few seconds over a low flame to dry out and become flaky.
4 - Add the butter and let stand to melt; and season with a trace of pepper
and the minced parsley
