Potato and Cheese Mounds
4 cps freshly mashed fluffy potatoes
1/4 lb of dairy cheese or 1 pkg plain or pimento cheese spread
1 - Form the mashed potatoes into four mounds on an oiled shallow baking pan,
allowing a cup of mashed potatoes for each. 2 - Make indentations in the mounds with the back of a teaspoon.
3 - Cut the cheese into small pieces; fill the indentations with the cheese;
brush with melted butter; and dust with salt and pepper.
4 - Bake in a hot oven until the mounds are brown and the cheese has melted.
