Roasted Peeled Potatoes
8 medium-sized potatoes
1 tsp salt
4 tbsp butter
1 - Peel and wash the potatoes; dust with salt and place in a casserole
or covered baking dish with the butter.
2 - Bake, covered closely in a moderately hot 0oven, 350 to 375 degrees F. for an hour,
shaking occasionally so they will brown evenly.
3 - If the potatoes are very large, cut them in half.
