Spinach and Cheese Dumplings
3 cps chopped cooked spinach
3 tbsp butter
1 1/4 cps dry cottage cheese
2 tbsp flour
3 egg yolks
1 qt boiling water or soup stock
grated Parmesan or American cheese
1/4 cp melted butter(additional)
1 - The spinach should be very well drained, and chopped quite fine.
2 - Add the 3 tbsp of butter which should be melted and salt, pepper, and
a trace of nutmeg to season. 3 - Stir in the cottage cheese, the flour, and the egg yolks.
4 - Chill; make into small round balls contaqining a tbs each;
roll in additional flour; and drop into boiling water or soup stock.
5 - As soon as they come to the top, drain and serve with melted butter poured
over and a sprinkling of grated cheese.
