2 cps well drained, finely chopped cooked cold spinach
2/3 cp very thick white sauce
1/4 tsp salt
a few grains pepper
a few grains nutmeg
fine dry bread or cracker crumbs
fat for deep frying
1 - Combine the spinach, white sauce, salt and pepper and nutmeg; and mix until blended.
2 - Form into balls; and roll in bread or cracker crumbs.
3 - Dip in the egg, slightly beaten with 1 tbsp milk and roll again in bread or cracker crumbs.
4 - Heat enough fat in a heavy deep frying pan to submerge the croquettes.
5 - When hot enough to brown and inch cube of bread in 55 seconds, put the croquettes in a frying basket.
6 - Lower them gently into the fat; and fry over moderate heat until golden brown.
7 - Drain on paper napkins or towels nd serve with chopped egg, or cheese sauce.
