Spinach and Eggs en Casserole
3 cps well drained chopped cooked spinach
1 cp medium white sauce
1 small onion, minced
2 sliced, hard cooked eggs
3 tbsp buttered dry crumbs
1 - Combine the spinaceh with the cream sauce and minced onions.
2 - Arrange half the mixture in a well oiled baking dish or casserole.
and put in the hard cooked eggs.
3 - Cover with the remaining spinach] and sprinkle with crumbs.
4 - Bake in a moderate oven, 375 degrees F. for 20 minutes, or until brown on top.
5 - Serve as the main course for luncheon or a meatless dinner.
